October Goals

I am not usually big on New Year's Resolutions or monthly goals, partially because I usually end up breaking them and partially because I simply end up forgetting them, but since I have been back in Charleston, there are so many thoughts and desires I have and goals I want to acomplish before my next season. Being the ENFP that I am, goals and schedules make me anxious; however, at a time like now, when my brain is going crazy, I know a little planning and organization won't hurt me.

Lara Casey's blog has inspired me to #ClearOctober.  She talks about being "LIGHT, BRIGHT, FREE, OPEN, and READY" for change in whatever way the Lord wants to do it.  More than any other month's themes, I resonated with this one.  Before I even knew the theme, and the day after I returned home from Michigan, I completely purged my closet. Y'all, you should really see how many bags of clothes and shoes I am consigning and giving away.  I thought it would be hard, but the minute I started, I just couldn't stop.  Jesus has been opening my eyes to His lifting of heaviness and burdens He desires for my life and yours.  We don't have to live in darkness, trapped, and incapable of seeing Him move. So let's #ClearOctober, you and me, to allow the Lord to gently and graciously change our lives for His Kingdom and for our Joy!

October Goals:
  • Read Every Woman's Struggle
  • Begin writing my Haitian pen-pal
  •  Write some friends encouraging letters
  • Have a "date with Jesus" entire DAY
  • College friend reunion in Greeneville, SC
  • Purge closet
  • Go hiking and enjoy autumn leaves in the mountains
  • Attend Seacoast’s First Wednesday service
  • Get back on running track, 30 min/day, 5 days/week
  • Make the blog easier to see things/navigate (done!:)

Another One's Treasure

There are some great consignment/thrift/secondhand shops around where I live but I've been bummed because I have such a tiny car and not enough room to fit really anything else.  I stumbled on this hole in the wall thrift store literally 2 minutes from my house and just couldn't resist buying some SUPER cheap and super cute shabby items. Pretty sure all this was less than $15. I'm packing up my car tomorrow. If I have to, I'll drive all the way back to SC with these babies on my lap!
Although I didn't get the amour, because it was a bit big, I'm in love with the French Provincial chest.

Oh! And today I found out I won a contest Nancy Ray hosted a couple weeks ago. I never win stuff so I was pretty excited about free Printstagrams!

I hope everyone has a fabulous Friday eve tomorrow! ;)

Happy Sunday!

Although I've loved Sara Bareilles for a long time, I am definitely obsessed with her current song "Brave." Not to mention this pretty awesome video that goes along with it. I kind of secretly wish I could have been in it.

I'll leave you and hope to encourage you with a quote from a book I am reading called "Follow Me" by David Platt.
We too often view Jesus as the only one who can save us from our sins but we forget that He is the only one who can satisfy our souls.
I would highly recommend this book.  It takes a couple chapters to really get to the meat, but now I'm at chapter 4 and can't put it down. Which is bad, because Vance and I are supposed to be reading a chapter a week. Whoops!

Enjoy the week everyone. Get excited labor day is coming up! Most of us are off work and I'm headed down South for a couple days.

XO,
Victoria

Granola

If you know me, you know my breakfast usually always consists of granola.  When I lived in Columbia, there was a place called immaculate consumption that had the BEST granola I've ever had. I've tried to imitate it time and time again but it never quite turns out right.  So when I tried the granola my chef roommate always makes, I was hooked because it tastes very similar! It is by far, the best granola I've ever had! And it's super easy! Enjoy!

Ingredients:

  • 6 cups oats, thick cut
  • 2 cups pumpkin seeds
  • 2 cups walnuts
  • 1 cup sunflower seeds
  • 1 cup slivered/half almonds
  • 2 cups organic coconut (optional)
  • 1 tsp. salt
  • 1 tbsp. cinnamon
  • 1 cup honey or maple syrup, or combo
  • 1 cup oil
Cook at 250 degrees for about an 1 1/2 hours. Stir every once in a while.
And voilĂ ! I usually eat mine with blueberries and vanilla soy milk but obviously you can add any fruit!
